Mediterranean Hummus Platter

A mezze board is the ultimate low-stress entertaining move: a beautiful spread that requires zero last-minute cooking. The centerpiece is the smoothest, dreamiest hummus, surrounded by a colorful array of dippable things. Everyone builds their perfect bite.

Ingredients

  • For the hummus: 1 can (15 oz / 425g) chickpeas, drained and rinsed
  • ½ teaspoon baking soda
  • ⅓ cup (80g) tahini, well-stirred
  • ¼ cup (60ml) fresh lemon juice
  • 2 garlic cloves
  • ½ teaspoon ground cumin
  • ¾ teaspoon fine sea salt
  • 3-4 tablespoons ice water
  • Extra-virgin olive oil, smoked paprika, and parsley, for serving
  • For the platter: warm pita or flatbread
  • Persian cucumbers, sliced
  • Cherry tomatoes
  • Marinated olives (Castelvetrano, Kalamata, etc.)
  • Crumbled feta cheese
  • Jarred roasted red peppers
  • Pickled red onions
  • Fresh herbs (mint, parsley, dill)

Instructions

  1. 1

Place the chickpeas in a saucepan with the baking soda. Cover with 2 inches of water and bring to a boil. Simmer for 15-20 minutes until the chickpeas are very soft and the skins are loose. This is the secret to ultra-smooth hummus.

  2. 2

Drain and rinse the chickpeas under cold water, rubbing gently to release as many skins as possible (don't worry about being perfect).

  3. 3

In a food processor, combine the lemon juice and garlic. Process for 30 seconds, then strain into the processor bowl (this mellows the raw garlic bite).

  4. 4

Add the tahini and process for 1 minute. Scrape the sides and add 2 tablespoons of ice water; process until fluffy.

  5. 5

Add the chickpeas, cumin, and salt. Process for 3-4 minutes, scraping down as needed, until ultra-smooth. Add more ice water as needed for a creamy consistency.

  6. 6

Spread the hummus on a large platter, creating a swoosh with the back of a spoon. Drizzle generously with olive oil and dust with smoked paprika and chopped parsley.

  7. 7

Arrange the cucumbers, tomatoes, olives, feta, peppers, pickled onions, and herbs around the hummus.

  8. 8

Serve with warm pita and let guests build their bites.

Chef's Tips

  • Prep all ingredients before you start cooking for a smoother experience.
  • Taste as you go and adjust seasoning to your preference.
  • Don't overcrowd the pan—cook in batches if needed for best results.
  • Let meat rest after cooking to keep it juicy and tender.

Storage & Reheating

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. To reheat, use a microwave at 50% power or warm in a covered pan over medium-low heat until heated through. For best texture, avoid reheating more than once.
