Mediterranean Hummus Platter
Silky homemade hummus surrounded by warm pita, marinated olives, cucumbers, feta, and roasted peppers—the perfect party spread.

Ingredients
- For the hummus: 1 can (15 oz / 425g) chickpeas, drained and rinsed
- ½ teaspoon baking soda
- ⅓ cup (80g) tahini, well-stirred
- ¼ cup (60ml) fresh lemon juice
- 2 garlic cloves
- ½ teaspoon ground cumin
- ¾ teaspoon fine sea salt
- 3-4 tablespoons ice water
- Extra-virgin olive oil, smoked paprika, and parsley, for serving
- For the platter: warm pita or flatbread
- Persian cucumbers, sliced
- Cherry tomatoes
- Marinated olives (Castelvetrano, Kalamata, etc.)
- Crumbled feta cheese
- Jarred roasted red peppers
- Pickled red onions
- Fresh herbs (mint, parsley, dill)

Place the chickpeas in a saucepan with the baking soda. Cover with 2 inches of water and bring to a boil. Simmer for 15-20 minutes until the chickpeas are very soft and the skins are loose. This is the secret to ultra-smooth hummus.

Drain and rinse the chickpeas under cold water, rubbing gently to release as many skins as possible (don't worry about being perfect).

In a food processor, combine the lemon juice and garlic. Process for 30 seconds, then strain into the processor bowl (this mellows the raw garlic bite).

Add the tahini and process for 1 minute. Scrape the sides and add 2 tablespoons of ice water; process until fluffy.

Add the chickpeas, cumin, and salt. Process for 3-4 minutes, scraping down as needed, until ultra-smooth. Add more ice water as needed for a creamy consistency.

Spread the hummus on a large platter, creating a swoosh with the back of a spoon. Drizzle generously with olive oil and dust with smoked paprika and chopped parsley.

Arrange the cucumbers, tomatoes, olives, feta, peppers, pickled onions, and herbs around the hummus.
