Fresh Caprese Bruschetta

Bruschetta is the ultimate crowd-pleasing appetizer. This Caprese version combines juicy tomatoes, creamy fresh mozzarella, and fragrant basil on perfectly toasted bread. It's simple, fresh, and absolutely delicious—especially when tomatoes are in season.

Ingredients

  • 1 French baguette, sliced diagonally into ½-inch pieces
  • 4 tablespoons extra virgin olive oil, divided
  • 2 cloves garlic, halved
  • 4 medium ripe tomatoes, diced
  • 8 oz (225g) fresh mozzarella, diced
  • ¼ cup fresh basil leaves, chiffonade
  • 1 tablespoon balsamic glaze
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. 1

    Preheat oven to 400°F (200°C).

  2. 2

Arrange baguette slices on a baking sheet. Brush both sides with 2 tablespoons olive oil.

  3. 3

Toast in the oven for 8-10 minutes, flipping halfway, until golden and crispy.

  4. 4

While still warm, rub each toast with the cut side of a garlic clove.

  5. 5

In a medium bowl, combine diced tomatoes, mozzarella, and basil.

  6. 6

Drizzle with remaining olive oil and the balsamic glaze. Season with salt and pepper. Toss gently.

  7. 7

Spoon the tomato mixture generously onto each piece of toast.

  8. 8

Arrange on a serving platter and drizzle with extra balsamic glaze if desired.

  9. 9

Serve immediately for the crispiest results.

Chef's Tips

  • Prep all ingredients before you start cooking for a smoother experience.
  • Taste as you go and adjust seasoning to your preference.
  • Don't overcrowd the pan—cook in batches if needed for best results.
  • Let meat rest after cooking to keep it juicy and tender.

Storage & Reheating

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. To reheat, use a microwave at 50% power or warm in a covered pan over medium-low heat until heated through. For best texture, avoid reheating more than once.
