Hot Spinach Artichoke Dip

This is the spinach artichoke dip that restaurants wish they could make. It's creamy, cheesy, and absolutely loaded with spinach and artichoke hearts. Served bubbling hot with chips or bread, it's always the first appetizer to disappear.

Ingredients

  • 8 oz (225g) cream cheese, softened
  • ½ cup (120g) sour cream
  • ½ cup (115g) mayonnaise
  • 3 cloves garlic, minced
  • 1 cup (100g) freshly grated Parmesan cheese, divided
  • 1 cup (100g) shredded mozzarella cheese, divided
  • 1 can (14 oz / 400g) artichoke hearts, drained and chopped
  • 10 oz (280g) frozen spinach, thawed and squeezed dry
  • ½ teaspoon red pepper flakes
  • Salt and pepper to taste
  • Tortilla chips, pita chips, or sliced baguette for serving

Instructions

  1. 1

    Preheat oven to 375°F (190°C).

  2. 2

In a large bowl, beat the cream cheese until smooth. Add sour cream and mayonnaise; mix until combined.

  3. 3

Stir in the minced garlic, ¾ cup Parmesan cheese, and ¾ cup mozzarella cheese.

  4. 4

Fold in the chopped artichoke hearts and squeezed spinach. Season with red pepper flakes, salt, and pepper.

  5. 5

Transfer the mixture to a baking dish or oven-safe skillet. Spread evenly.

  6. 6

Top with the remaining Parmesan and mozzarella cheese.

  7. 7

Bake for 20-25 minutes until bubbly and golden brown on top.

  8. 8

Let cool for 5 minutes before serving. Serve with tortilla chips, pita chips, or sliced baguette.

Chef's Tips

  • Prep all ingredients before you start cooking for a smoother experience.
  • Taste as you go and adjust seasoning to your preference.
  • Don't overcrowd the pan—cook in batches if needed for best results.
  • Let meat rest after cooking to keep it juicy and tender.

Storage & Reheating

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. To reheat, use a microwave at 50% power or warm in a covered pan over medium-low heat until heated through. For best texture, avoid reheating more than once.
