Classic Italian Tiramisu
Layers of espresso-soaked ladyfingers and mascarpone cream, dusted with cocoa—the ultimate Italian dessert.
Tiramisu means 'pick me up' in Italian, and this dessert definitely lives up to its name. Layers of coffee-soaked ladyfingers, rich mascarpone cream, and a dusting of cocoa powder create the perfect end to any Italian meal—or any meal at all.
Ingredients
- 6 large egg yolks
- ¾ cup (150g) granulated sugar
- 1⅓ cups (300g) mascarpone cheese
- 2 cups (480ml) heavy whipping cream
- 2 cups (480ml) strong espresso or coffee, cooled
- 3 tablespoons coffee liqueur (like Kahlúa) or dark rum (optional)
- 2 packages (7 oz / 200g each) Italian ladyfingers (Savoiardi)
- Unsweetened cocoa powder for dusting

In a heatproof bowl set over simmering water, whisk egg yolks and sugar until thick and pale, about 8-10 minutes. The mixture should form ribbons when lifted. Remove from heat and let cool slightly.

Add the mascarpone cheese to the cooled egg mixture and whisk until smooth.

In a separate bowl, beat the heavy cream to stiff peaks. Gently fold the whipped cream into the mascarpone mixture in two additions.

Combine the cooled espresso and coffee liqueur (if using) in a shallow dish.

Working quickly, dip each ladyfinger into the espresso mixture—just a quick dunk on each side. Don't soak them or they'll become too soggy.

Arrange a layer of dipped ladyfingers in a single layer in a 9x13 inch dish.

Spread half of the mascarpone cream over the ladyfingers.

Repeat with another layer of dipped ladyfingers and the remaining cream.

Cover and refrigerate for at least 4 hours, preferably overnight.

Just before serving, dust generously with cocoa powder through a fine-mesh sieve.
