Super Moist Banana Bread
Incredibly moist, perfectly sweet, and loaded with banana flavor—this is the only banana bread recipe you'll ever need.
Got overripe bananas? This is the recipe for you! The key to incredibly moist banana bread is using very ripe bananas—the browner the better. The natural sugars caramelize as they bake, creating deep, rich banana flavor in every bite.
Ingredients
- 3 large very ripe bananas (about 1¼ cups mashed)
- ⅓ cup (75g) melted butter
- ¾ cup (150g) granulated sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- Pinch of salt
- 1½ cups (190g) all-purpose flour
- Optional: ½ cup (60g) chopped walnuts or chocolate chips
Instructions
- 1
Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line with parchment paper.
- 2
In a large mixing bowl, mash the ripe bananas with a fork until mostly smooth.
- 3
Stir the melted butter into the mashed bananas.
- 4
Mix in the sugar, beaten egg, and vanilla extract.
- 5
Sprinkle the baking soda and salt over the mixture and stir in.
- 6
Add the flour and mix until just incorporated. Do not overmix.
- 7
Fold in walnuts or chocolate chips if using.
- 8
Pour the batter into the prepared loaf pan and spread evenly.
- 9
Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
- 10
Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Chef's Tips
- •Prep all ingredients before you start cooking for a smoother experience.
- •Taste as you go and adjust seasoning to your preference.
- •Don't overcrowd the pan—cook in batches if needed for best results.
- •Let meat rest after cooking to keep it juicy and tender.
Storage & Reheating
Store leftovers in an airtight container in the refrigerator for up to 3-4 days. To reheat, use a microwave at 50% power or warm in a covered pan over medium-low heat until heated through. For best texture, avoid reheating more than once.
