Ingredients
- 2 cups (250g) all-purpose flour
- ¾ cup (150g) granulated sugar
- 2 teaspoons baking powder
- ½ teaspoon salt
- ⅓ cup (80ml) vegetable oil
- 1 large egg
- 1 cup (240ml) milk
- 2 teaspoons lemon zest
- 2 tablespoons fresh lemon juice
- 1 teaspoon vanilla extract
- 1½ cups (220g) fresh blueberries
- For the Lemon Glaze (optional):
- 1 cup (120g) powdered sugar
- 2 tablespoons fresh lemon juice

In a large bowl, whisk together flour, sugar, baking powder, and salt.

In a separate bowl, whisk together oil, egg, milk, lemon zest, lemon juice, and vanilla.

Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix—batter should be lumpy.
