This Creamy Garlic Tuscan Chicken is a showstopper that comes together in just 30 minutes. The combination of tender chicken, aromatic garlic, tangy sun-dried tomatoes, and fresh spinach in a luscious cream sauce will make you feel like you're dining in Tuscany.

Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 680g)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 3 tablespoons olive oil, divided
  • 6 cloves garlic, minced
  • 1 cup (240ml) heavy cream
  • ½ cup (120ml) chicken broth
  • ½ cup (75g) sun-dried tomatoes, drained and chopped
  • 3 cups (90g) fresh baby spinach
  • ½ cup (50g) freshly grated Parmesan cheese
  • Fresh basil for garnish

Instructions

    Season the chicken breasts on both sides with salt, pepper, and Italian seasoning.

    Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chicken and cook for 6-7 minutes per side until golden brown and cooked through (internal temperature of 165°F/74°C). Remove and set aside.

    In the same skillet, add the remaining tablespoon of olive oil. Reduce heat to medium and add the minced garlic. Sauté for 30 seconds until fragrant.
