Ingredients
- 4 boneless, skinless chicken breasts (about 1.5 lbs / 680g)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon Italian seasoning
- 3 tablespoons olive oil, divided
- 6 cloves garlic, minced
- 1 cup (240ml) heavy cream
- ½ cup (120ml) chicken broth
- ½ cup (75g) sun-dried tomatoes, drained and chopped
- 3 cups (90g) fresh baby spinach
- ½ cup (50g) freshly grated Parmesan cheese
- Fresh basil for garnish

Season the chicken breasts on both sides with salt, pepper, and Italian seasoning.

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chicken and cook for 6-7 minutes per side until golden brown and cooked through (internal temperature of 165°F/74°C). Remove and set aside.
