Ingredients
- For the Taco Meat:
- 1.5 lbs (680g) ground beef (80/20)
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon cayenne pepper
- 1 teaspoon salt
- ½ cup (120ml) water
- For the Pico de Gallo:
- 4 Roma tomatoes, diced
- ½ white onion, finely diced
- 1 jalapeño, seeded and minced
- ½ cup fresh cilantro, chopped
- 2 tablespoons lime juice
- Salt to taste
- To Serve:
- 12 small corn tortillas
- Shredded lettuce, sour cream, shredded cheese
- Lime wedges
Instructions
- 1
Make the pico de gallo: Combine tomatoes, onion, jalapeño, cilantro, lime juice, and salt in a bowl. Refrigerate while you prepare the meat.
- 2
In a small bowl, mix together all the taco seasoning spices.
- 3
Heat a large skillet over medium-high heat. Add the ground beef and break it up with a wooden spoon.
- 4
Cook for 6-8 minutes, stirring occasionally, until no longer pink. Drain excess fat if needed.
- 5
Sprinkle the taco seasoning over the meat and stir to coat. Add the water.
- 6
Reduce heat to medium-low and simmer for 5 minutes, stirring occasionally, until the liquid is mostly absorbed.
- 7
Warm the tortillas: Stack them in foil and heat in a 350°F (175°C) oven for 10 minutes, or warm individually in a dry skillet.
- 8
Build your tacos: Place meat in warm tortillas and top with pico de gallo, lettuce, cheese, and sour cream.
- 9
Serve with lime wedges for squeezing over the top.
Chef's Tips
- •Prep all ingredients before you start cooking for a smoother experience.
- •Taste as you go and adjust seasoning to your preference.
- •Don't overcrowd the pan—cook in batches if needed for best results.
- •Let meat rest after cooking to keep it juicy and tender.
Storage & Reheating
Store leftovers in an airtight container in the refrigerator for up to 3-4 days. To reheat, use a microwave at 50% power or warm in a covered pan over medium-low heat until heated through. For best texture, avoid reheating more than once.
